    Most of our chefs, GMs, and bar leads started as cooks, hosts, runners, or bussers. We train patiently and promote when people are ready.

    Before every service, for everyone. Chef cooks for the team. Non-negotiable across every room.

    Rotations between rooms

    Learn a new cuisine or service style inside the family. A Stellina cook can stage at L'Étoile for a month without changing employers.

I started as a runner. Three years later I'm running the bar at L'Étoile. The sous chef who taught me how to shake a drink started as a dishwasher.
